没有什么比一锅热气腾腾的炖肉,更能治愈疲惫的身体和灵魂了。但亲自下厨时你就会发现,自己炖出来的肉又柴又硬,咬起来很费劲儿,还没饭店里做的好吃。其实,要想做出一锅又香又软的炖肉,需要把握5个关键点。《生命时报》邀请专家,告诉你炖肉不发柴的秘诀。受访专家中国人民解放军陆军总医院营养师 于仁文1、选对部位俗话说“贴着骨头的肉最香”,因此炖肉的原料首选带皮、带骨、肉筋多或脂肪均匀的部位,比如五花肉、牛腩、排骨、腔骨等。这些部位要么因为皮下脂肪丰富而浓香,要么因为带骨带筋口感好。2、选对锅锅底过薄不利于恒温,所以炖肉时,砂锅是最好的选择,生铁锅次之,薄底的不锈钢锅再次之。复合底的不锈钢锅或不锈钢的电压力锅也值得推荐。只要掌握了电压力锅的使用技巧,别放太多水,收好汁,照样可以炖出香气扑鼻的一锅好肉。3、选对刀工切肉时要注意刀工,刀工一致会让肉的纤维更短,更容易入味和熟透。牛羊肉要逆着肉的纹理切,即刀和肉的纹理呈90度垂直,切出来的肉片,纹路呈“井”字状。猪肉要顺着肉的纹理切,即刀和肉的纹理呈水平线,切出来的肉片,纹路呈“川”字状。鸡的肉质比较嫩,刀和肉的纹理,只要能有个倾斜的角度即可。4、选对火候要想使炖肉的味更浓,掌握火候是关键。一锅好肉如果用大火让其一直翻滚,很容易将肉块中的脂肪水解出来,当肌肉纤维束之间没了脂肪后,口感会发柴。炖肉需要大火烧开,撇净浮沫后关小火,汤面冒小菊花泡慢慢炖熟。如果实在看不住锅,可以先把炖肉炒香,再加水烧开,撇沫后倒进汤盆中,直接隔水炖。这样做的缺点是,因为汤汁没有蒸发,不如炖出来的肉鲜美。5、把握好放调味料时间放盐过早会让肉的蛋白质变性收缩,不仅口感变硬,而且腥膻气味出不来,外面的汤汁滋味进不去。恰当的调味时间是,出锅前10分钟左右放盐,1分钟左右放味精或鸡精。本期编辑:郑荣华版权声明:本文为《生命时报》原创,未经授权谢绝转载。4825阅读搜索炖肉软烂不柴的秘方炖猪肉的八大香料配比怎样炖肉不柴不硬炖肉软烂的最佳方法肉怎么焯水肉才不柴炖猪肉不柴的秘诀

鸡胸肉是日常生活中深受人们喜爱的一种食物,不仅美味可口,而且营养价值非常高。它的做法有很多种,各地都有所不同,但是大同小异,只需要准备好所需要的食材和工具,再根据给出的步骤一步步进行就可以制作完成,有感兴趣的朋友们可以试一试,相信一定可以做出很嫩的鸡胸肉嫩煎鸡胸肉。材料:1四块无骨无皮的鸡胸肉半杯多用面粉盐和胡椒五勺橄榄油四勺黄油两瓣切碎的蒜两勺驴蹄草,洗净晾干半杯干白一杯鸡汤四勺新鲜挤压出的柠檬汁两勺切碎的欧芹已经做好的意大利面2做法:用小木槌把鸡胸肉砸到略平,用盐和胡椒调味。裹上面粉,把多余的面粉晃掉在平底煎锅里放油,融化两勺黄油,把鸡胸肉放入热油中两面各煎五分钟。(金黄色就差不多了)把鸡胸肉倒盘子里。剩下的黄油放煎锅里加入大蒜和驴蹄草,柠檬汁,白酒,鸡汤。煮到沸腾。去除棕色杂质,用盐和胡椒调味。把鸡胸肉倒回煎锅里,再来五分钟,然后盛出,把汤汁浇上去,撒上碎欧芹。和意大利面同食。3在沙发上看电影绝配の炸鸡:材料:25g爆米花85g面包或者直接用面包渣一勺红辣椒或者直接用辣椒粉50g纯面粉(意思就是不自带发酵属性的,自发粉就不行)一个大号的鸡蛋(英国超市里会标注大中小号的鸡蛋,其实大号也没多大,你要觉得不够就多打几个)2块无皮鸡胸肉,切成细长条【蘸酱原料:150毫升罐装酸奶油、一个酸橙的皮和半个酸橙的汁(酸橙本体不要)、一把切碎的芹菜(即胡荽,中国常见品种)】【你要是不讲究的话蘸酱可以用麦乐鸡调料酱代替】过程:4把爆米花、面包、辣椒放入食物粉碎机中充分打碎(如果用的是面包渣和辣椒粉就省事多了),倒进A碗。在B碗里搅拌鸡蛋。把面粉和调味料在C碗里混合。5把鸡肉条在C碗里沾一沾,放进B碗里,再放进A碗里。确保面包渣粘牢了。然后把鸡肉静置半小时以上,最长不可超过一天。在这个时候抽空去把蘸酱的原料全都混在一起,放在小碗里。在煎锅里加热足够没过鸡肉的油,油热之后把鸡肉扔进去每面加热两三分钟。(一批一批处理不至于手忙脚乱)等炸熟了变金黄色了,放在厨房纸上晾一晾,和酱一起趁热吃。

冻肉如何保持新鲜?牢记这几点,无论冻啥肉都不会柴,简单实用肉菜是我们在生活中不可缺少的,不管是炒肉片或者炖肉、用肉来煲汤等等都是很不错的选择。所以我们也会把吃不完的肉放到冰箱里冷冻,等吃的时候也和新鲜的肉味道差不多。但我们需要知道,冻肉也是有一定的技巧的,我们冻肉的时候是为了让肉保持新鲜,但有时候解冻的肉类就容易发柴发干,所以今天我们就来说一下如何在家冻肉能让肉尽量的保持新鲜,这样保留了肉质的营养成分还会让肉更鲜嫩好吃。牢记这几点,无论冻什么肉都新鲜不柴1、首先将肉切成块去冷冻将肉切块去冷冻是有一定好处的,首先就是切块之后方便我们随用随取,并且能控制冻肉所需要的用量。比如我们想做蔬菜炒肉片的时候,那么拿出其中的一块即可。而如果我们需要做红烧肉或者炖肉,那就拿出其中的两块或者三块,这样就能做好一盘子的红烧肉了。所以切块冷冻避免了反复将肉取出放下,也避免了肉反复的解冻然后继续冻上,因为这样的冻肉保存方式并不好,会加速肉质发柴并且也容易出现脏东西等等。2、将肉缠绕保鲜膜我们在冻肉的时候,无论是冻什么类型的肉类,都需要将肉缠绕上保鲜膜。因为所有的肉包括一些可以长期保存的蔬菜、饺子以及馒头等等食物都在里面。这样很容易就出现串味的问题,而且也不利于冻肉保持新鲜。而保鲜膜能很好的贴合上肉类,这样我们冷冻的时候就能保证充足的水分,这样我们在冻肉的时候就能很大程度的起到保鲜作用了。或者我们用到可以冷冻的保鲜盒,这样也是很好的保存肉类的方法。3、冻肉时间要留意我们在冻肉的时候,如果一种的肉类在冰箱里没有吃完,那么我们就别继续买了。这样我们将各个时间买回来的肉类都一股脑的放到冰箱里,会让我们冻肉搞不清楚时间。因为虽然将肉都冷冻起来保存,而且肉类和包子馒头一样可以稍微放的长久一些。但其实我们在冻肉的时候也要注意肉类的各个保质期,否则放的时间太长了或者买的肉都是随意放到冰箱里,有时候放上好几个月都没有吃。等我们再吃的时候就会发现肉类的口感不好,不仅发柴而且还没有肉类本身鲜嫩的味道。所以记住冻肉时间是我们非常要注意的问题。

文章阅读

(1)边读边想的方法。边读边想,读思结合,是被实践证明的行之有效的阅读方法。凡课文所包含的词、句、段、篇等方面的内容,都属于阅读时思考的范围。不懂或值得怀疑的问题,也应当列入思考的范围之中。 (2)联系上下文的方法。课文中有相当多的词语、句子,如果就词解词,就句析句,往往难以理解。如果把他们放在具体的语言环境里,联系上下文琢磨,就能确切地理解。 (3)联系生活实际的方法。语文课本内容十分丰富。许多课文所描写的事物、所运用的语言,与小学生的生活距离较远,学生理解起来比较困难。遇到这种情况,就需要启发学生从自己的生活实际中去寻找、发现与课文描写的事物相通的经验,把二者联系起来,帮助理解课文的语言文字。 (4)联系自身情感体验的方法。体会课文的思想感情是对小学生阅读能力比较高的要求,语文课本里相当数量的课文,涉及到各个时期,从事各种工作的人物,写了他们种种不同的经历、不同的行为、不同的事迹,表达了人物丰富的思想感情。对此,小学生在阅读中体会起来有一定的难度。但许多情感体验是人们所共有的,学生同样如此。如果学生能够联系自身的情感体验来体会课文中人物的思想感情,他们就能和作者产生共鸣,就能体会作者的思想感情。 (5)圈画批注的方法。一方面圈画批注把阅读思考的结果记下来,便于深入地阅读;另一方面,动手又能促使学生进一步动脑,必须用心读书,否则圈画批注不到点子上。学会圈画批注的方法,对培养他们的独立阅读能力有不可忽视的作用。小学生练习圈画批注的主要内容是:课文中的重点词语;含义深刻的句子;自己感受深、受感动、受启发的地方;不理解、读不懂的地方等。

我读书一般是用快速阅读法,快速阅读不仅体现在阅读速度的高效上,更是理解的高效:对抓住文章段落的脉络和重点有非常好的作用,帮助我们对文章做整理、分析和归纳。我练习快速阅读用的是《精英特全脑速读记忆训练》,软件练习是比较简单有效的,如果你的阅读效率低,有必要练习提高一下。在阅读过程中必须养成有目的、有重点地进行阅读的习惯,使我们在阅读时善于发现重点、新问题、新观点和新材料。首先,段落:掌握段意最方便的办法是抓“主句”,也就是抓住说明全段主要意思的句子。其次,抓住文章的脉络主旨:有的文章,标题就说明了中心思想,有的在文章开头和结尾点明中心思想,有的则通过主要事件来表达中心思想,只要根据主要事件,就能很快确定中心思想。其三,对于文章、书籍中的主要人物、事迹、观点、中心思想等一些重点,要有意识的进行记忆,形成自己的思维导图,促成更好的理解。在读书的过程中或读完一本书的时候,要学着做点读书笔记,记录一下书本的脉络主旨、主要人物、事迹、以及阅读感悟等,一些优美词句也可以摘抄一下。

John works very hard. He goes to work early. Every day he gets out of the lift. Then he walks to a bus stop. The bus stop is in front of a station. It is about two hundred meters from his home.

He usually catches the number 11 bus to work, but sometimes he goes by train. John works in a factory about ten kilometers from his home. He starts working at 8:30, and finishes at 4:45. He gets back home at a quarter past five. He gets into the lift, and he goes up to the twelfth floor. Then he gets out of the lift and climbs up to the fifteenth floor on foot.

There are forty-two students in our class. There are also two American boys. They are Jack and Mike. They are our good friends. They like watching TV, but they don't like playing basket-ball .They often go to school by bike. And I often go to school on foot. There is one English girl in our class. Her name is Lucy. She likes playing basketball and she also likes swimming. She usually does her homework in the evening. She often watches TV on Saturday afternoons. She is my good friend. All of the Chinese students are Yong Pioneer.

Not long after an old Chinese woman came back to China from her visit to her daughter in the States, she went to a city bank to deposit the US dollars her daughter gave her. At the bank counter, the clerk checked each note carefully to see if the money was real. It made the old lady out of patience. At last she could not hold any more, uttering. "Trust me, Sir, and trust the money. They are real US dollars. They are directly from America."
