1.Bourne MC. The texture profile of ripening pears[J]. Food Sci, 2008, (33): 223-227. This project is aimed at summarizing the best additive amount of the ginger juice and brown sugar on the basis of traditional production technology of yoghourt by searching the ginger juice and brown sugar systematically and we made it ferment to be new kind of yoghourt product. Then we designed the processing craft of yoghourt of ginger juice and brown sugar by combining the processing craft of yoghourt, ginger juice and brown sugar.This text drawn a conclusion of the best craft and formula of the yoghourt with ginger juice and brown sugar by the way of combining single-factor experiment and orthogonal experiment. The experiment result indicated that the main factors which affected the yoghourt quality were the additive amount of ginger juice, brown sugar, lactic acid and the fermenting time. It also indicated the best formula and craft were composed by 5% ginger juice, 8% brown sugar, 20% lactic acid and 8-hour fermenting. The product we got after experiment was of great Organoleptic Properties, even color, warm sweetness, no acidity, creamy and even organization, no bubble on the surface, lubricate taste. The final product developed meet the national requirements and it was a kind of sanitarian yoghourt that was suitable for the people of all ages and of great market prospect.Key words: ginger juice; lactic acid fermenting; yoghourt
